Moncucchetto e Morchino
First produced with Chardonnay and Sauvignon Blanc, from 2012 with Chardonnay and Solaris, and from 2016 with Solaris only. The grapes are dried in raisining crates for a period of about 3-4 weeks in a drying room, during which they lose 40-45% of their weight and their sugar concentration increases by 35-40° Oe. The dried grapes are pressed whole. Fermentation at low temperature. No malic retrogradation. Maturation in steel tank for 10 months.
